Lasagna Soup

A hearty and flavorful soup inspired by traditional lasagna, combining ground beef, lasagna noodles, and a medley of vegetables and cheeses, perfect for a comforting meal.

What you need

cup mozzarella cheese

cup parmesan cheese

lb lasagna noodles

tbsp fresh basil
oz ground beef

cup ricotta cheese

yellow onion

squash

oz beef broth

oz tomato paste

tbsp sugar
tbsp garlic

cup fresh tomatoes
Instructions
1. Heat olive oil in a pot over medium high heat, and add minced garlic and chopped yellow onion. Cook for several minutes until fragrant. 2. Add ground beef to the pot, mince it, and add all seasonings except fresh basil. Cook until meat is browned. 3. Add tomato paste to the meat mixture and cook for a few more minutes, continuously mixing. 4. Add chopped zucchini and squash, and continue to cook for a couple of minutes. 5. Add pasta sauce, crushed tomatoes, sugar, and fresh basil, then mix together. 6. Pour in beef broth, mix, add lasagna noodles, and bring to a boil. Reduce to a simmer until noodles are cooked, about 30 minutes. 7. Season soup to taste. 8. In a serving bowl, place a scoop of ricotta cheese and some shredded mozzarella, then pour the soup over it. Mix together and top with grated parmesan and fresh basil.
