Take raw shrimp and season it with whatever you like. Cut red pepper, green pepper, and onion then cook the shrimp with the veggies over a grate on top of your small fire or hot coals on a cast iron pan with olive oil. Prepare avocado, tomato, red cabbage, jalapeño, and your sauce which consists of sour cream, mayo, sriracha, and lime juice. For the tortilla combine about a cup flour, mix in a little salt, 2-3 tbsp of melted butter, and 1/3 cup plus a few tablespoons warm water until you get a sticky dough. Knead for a few minutes then form a ball and then cover with a towel for an hour in a greased bowl. When ready flour your surface and roll very thin circles of your dough and cook on the cast iron until it is bubbling or cooked on that side, then flip and cook until it is done. It is tough to control temperature over a fire pit so you may have to keep flipping until it is done like I did if the pan isn’t hot enough at that point😂. Then assemble your taco with queso fresco or cotija cheese and enjoy 🌮

For the tortilla dough, combine about 1 cup flour, a little salt, 2-3 tablespoons of melted butter, and 1/3 cup plus a few tablespoons warm water until you get a sticky dough. 7. Knead the dough for a few minutes, then form a ball, cover with a towel, and let rest for an hour in a greased bowl. 8. When ready, flour your surface and roll the dough into very thin circles. 9. Cook the tortillas on the cast iron until bubbling or cooked on one side, then flip and cook until done. You may need to keep flipping if the pan isn’t hot enough due to fire pit cooking. 10.
