A delicious sandwich featuring crispy fried chicken thighs coated in a homemade hot honey butter sauce, served on freshly baked biscuits with cheese and optional pickles.
1. Heat oil to 350°F and preheat oven for your biscuits.
2. Season chicken thighs with seasoning of choice, then cover in buttermilk. Optionally, soak chicken overnight.
3. Mix a little buttermilk in flour to form clumps, then coat chicken thighs completely with flour. Let sit until oil is ready.
4. Bake biscuits according to package directions.
5. Fry chicken thighs at 350°F or until golden brown and internal temperature reaches 165°F, about 10-12 minutes.
6. Melt butter in pan on medium-high heat, add honey and hot sauce, and stir until thick and sticky.
7. Coat chicken thighs in the sauce.
8. Slice biscuits in half, add chicken, cheese, and optional pickles.
