First, prepare the dough: Combine warm water, sugar, and yeast; let it sit until foamy. Pour this mixture into the 00 flour, a drizzle of honey, olive oil, and salt. Form a shaggy dough, then transfer to a floured surface and knead for 10-15 minutes. Transfer the dough to an olive oil greased bowl and cover, allowing it to rise for 2-3 hours. While the dough rises, prepare the other components. Cook bacon and sausage on medium-high heat until done, then chop into small pieces. Whisk together 3 eggs with salt and pepper, then cook them on medium heat in a nonstick pan. For the hash browns, peel and shred a potato, then soak and rinse it in cold water. Wring out excess water using paper towels until dry. Cook the hash browns in the leftover sausage and bacon grease on medium-high heat until lightly brown. To make the gravy, whisk together equal parts butter and flour in a pan on medium heat and cook for a few minutes. Add milk (five times the amount of butter/flour), along with salt and pepper, combine, and simmer until slightly thickened. Once the dough is ready, punch it down. Butter a cast iron skillet and preheat your oven to 500Β°F. Layer the pizza with gravy, then hash browns, then cheese, and finally the cooked meats and any other desired toppings. Bake the breakfast pizza for about 20 minutes. Top with green onions and enjoy.
