Take chicken breast and season it. Coat the chicken in seasoned flour, then eggs, and finally breadcrumbs mixed with Parmesan cheese and seasoning. Fry the coated chicken in oil until cooked through. To make the sauce, sauté onion and garlic in olive oil in a pan for a couple of minutes. Then crush and add San Marzano tomatoes, seasoning, and fresh basil leaves. Simmer the sauce for 30 minutes or until it reaches your preferred consistency. For the roasted garlic, cut the top off of a head of garlic, drizzle with olive oil and seasoning, then wrap it in aluminum foil and place in a small dish. Bake the garlic at 400 degrees Fahrenheit (200 degrees Celsius) for 1 hour. Once the chicken, sauce, and roasted garlic are ready, place the sauce on top of the cooked chicken, along with slices of fresh mozzarella and more basil. Cook this in the oven until the cheese is melted and bubbling. Toast some bread in butter. Spread the roasted garlic onto the toasted bread, then top with your chicken Parmesan. Enjoy!
