Topping Prep: 1. Cook or par-cook pepperoni in a pan on medium heat until some grease is released, then pat off just some excess grease. 2. Cook Italian sausage with Italian seasoning on medium high heat in a pan until done. 3. Cook mushrooms on medium high heat with salt, pepper, parsley, garlic, butter, and olive oil until done. 4. Chop green pepper and red onion to desired size. 5. Cook bacon on medium high heat and season with just a little pepper, then chop into pieces. Dough Prep: 1. Combine warm water and sugar, then top with yeast and let sit until yeast is foamy (about 5-10 minutes). 2. Mix the yeast mixture and pour into your flour mixture with all of the rest of your dough ingredients (olive oil, salt, honey, 00 flour, garlic). 3. Once combined, transfer to a floured surface and knead for 5 minutes. 4. Transfer to a bowl slathered with olive oil and let rise for at least 2 hours, covered. 5. Punch down the dough when ready to place in pan. Pizza Sauce Prep: 1. Combine San Marzano peeled tomatoes, tomato paste, sugar, honey, olive oil, garlic, Italian seasoning, oregano, and salt. 2. Blend until smooth. 3. Store in fridge. 4. (Optional) For thicker consistency, add cornstarch if needed. Assemble & Bake: 1. Lightly butter your cast iron pan. 2. Throw in your dough and shape it to fit your pan. 3. Put a light layer of sauce. 4. Add cheese, followed by the rest of your toppings. 5. Bake around 500 degrees Fahrenheit or higher for about 20 minutes on the middle rack. 6. Transfer to the lower rack for a few more minutes. 7. Cooking times vary by oven, temperature, and amount of toppings, so use your eyes! 8. Top with red pepper flakes and enjoy!
